One of the biggest hits of the week was Pumpkin Pancakes from the Practical Paleo book by Diane Sanfilippo. It is my go to Paleo Bible while I go through this month long experiment. Oh..and it’s gorgeous to look through. The pictures will make you HUNGRY!
These pancakes are awesome! They are YUMMMM warm, cold, leftover, fresh-yum (did I mention that?). They are great rolled and eaten with your fingers. They are great like good ol’ fashioned pancakes. I might even play with toppings a bit -they have kind of a crepe like taste..possibilities are endless!
1/2 c canned pumpkin
1 tsp vanilla
2 tbs maple syrup
1 tsp pumpkin pie spice
1 tsp cinnamon
1/4 tsp baking soda
2 tbs butter
Whisk eggs, pumpkin, vanilla, and syrup together.
Combine the dry ingredients in a separate small bowl. Then add to the pumpkin mix
Melt butter on med heat in the skillet you will be cooking with.
Pour butter into the batter.
Spoon pancakes onto the skillet like you would with ‘regular’ pancakes. When a few bubbles appear flip em.
To reduce the amount of sugar the kids get..I told them these were ‘to go’ pancakes because syrup and butter were already IN the pancakes so we could eat them on the way to the bus.
*You can also used mashed bananas if you don’t want to use the syrup.
I agree..Briggs doesn’t LOOK happy but that was more about him sleeping late and being tired (he is SO not a morning person). He actually was thrilled that he got to eat breakfast while on his way to the bus..pancakes on the go was a novel idea :). That face just cracks me up.
